our story

"Life is like a taco. Once you grab the taco, you better eat it because it gets messy."

ANDREA HERMOSILLO

Founder of Chimalma Restaurant
Hola, my name is Andrea, and I'm the founder of Chimalma Restaurant. Chimalma is a goddess, symbolizing women in the Mexican Aztec culture. The significance of this name, I found a connection to my own experience with my mom’s influence of good food. I considered the name Chimalma for my restaurant, it resonated deeply with me. I aim to empower and inspire women through the rich culture of the food journey offered at Chimalma.

Our food

The concept behind Chimalma reflects my vision of offering an authentic taste of Mexico. Our commitment to authenticity extends to every aspect of our menu. At Chimalma, we prioritize health and quality by crafting everything from scratch and preparing each dish fresh daily. This dedication ensures that every meal not only delights the taste buds but also nourishes the body and soul. We believe in providing a guilt-free dining experience where you can enjoy the richness of Mexican cuisine without compromise. This is the essence of Chimalma.

Entrepreneur

The entrepreneurial spirit runs deep in my family. From a young age, I've been surrounded by relatives who have successfully built their own businesses. My father, in particular, has been a constant source of inspiration and guidance. He believed in me wholeheartedly, always encouraging me to trust my instincts and pursue my dreams with confidence.

When I became a parent, my priorities shifted. My daughter Genesis, who has cerebral palsy, required specialized care, especially during her early years spent predominantly in hospitals. Balancing the demands of a traditional job with the needs of my family became increasingly challenging. It was clear that I needed a more flexible and sustainable solution.

This realization fueled my decision to start my own business. Entrepreneurship offered me the autonomy and flexibility I needed to be there for my family while pursuing my professional ambitions. It wasn't just about following a passion; it was about creating a livelihood that aligned with my values and allowed me to prioritize what mattered most.

passion for food

Being a general contractor has immersed me in the predominantly male-dominated world of construction. But deep down, my heart has always yearned for something more personal. You see, in my family, food isn't just about sustenance—it's about connection and comfort. I can still hear my mother's voice offering a remedy for any ailment: "Come and taste some, eat this, you'll feel better." Food has always been our shared language, even if it occasionally involved a bit of indulgence in alcohol—oops!

So, when the opportunity to pursue my passion for food presented itself, it felt like the fulfillment of a long-held dream. Transitioning from construction to tacos isn't just a career shift for me; it's a journey back to my roots, to what truly brings me joy. Crafting delicious, soul-nourishing meals is where I feel most alive, and I'm beyond excited to embark on this new chapter of my life.

heritage

I'm proud to hail from Jalisco, a beautiful region near Guadalajara that holds a special place in my heart. You really should visit sometime—it's truly stunning. One thing I love about Jalisco is our rich tradition of artisan craftsmanship. There's a whole town dedicated solely to artisans, where everything is handmade with care and skill. It's inspiring to see the dedication and artistry that goes into their work.

I make it a point to support these artisans by purchasing directly from them. Whether it's items for the bar, glassware, plates, or anything else, I ensure that it comes from them. It's not just about the quality of their products; it's about giving back to my community and supporting our local economy.

Being here, I'm grateful for the opportunities I've been given, but I never forget where I come from. That's why I'm passionate about supporting my hometown in any way I can. It brings me immense satisfaction to know that I'm contributing to the livelihoods of my fellow Jaliscienses.

For me, it's not just about making money—it's about making a difference. If I can impart something meaningful to someone that positively impacts their life, that's what truly matters to me. Whether it's helping someone start their own business or simply offering guidance, seeing others succeed brings me joy and fulfillment. That's why I'm so passionate about changing lives and uplifting others—it's my purpose in life.
